Yesterday as I was wading in the pool I found myself, unsurprisingly, thinking about food. Before long the image of a taco salad popped into my head, and I immediately started brainstorming how I could make a super healthy, guilt-free version for dinner.
I knew I would use a pound of ground turkey and home make the taco seasoning [it’s so easy, tastes better than the prepackaged stuff and doesn’t have any of the funky ingredients you find on the back of the store-bought packets]. This is a great recipe: homemade taco seasoning
The main focus was a dressing that would pair well with the meat and other taco-y toppings, and I was craving something creamy without actually using cream. The perfect answer: avocado.
I skimmed a couple of recipes for inspiration and combined the best components of each to make this amazing avocado vinaigrette:
- 2 limes freshly juiced** [to make at least ¼ c]
- 1 jalapeno [seeded for less heat]
- 1 ripe avocado
- ½ cup cilantro
- 1 Tbs olive oil
- ¼ cup apple cider vinegar
- 3 cloves crushed garlic
- salt and pepper to taste
- in a blender, combine lime juice + jalapeno and blend until mixed [about 30 seconds]
- add avocado + cilantro + vinegar + oil and garlic—blend [you can add a couple tablespoons of water until desired consistency is achieved]
Next, toss your favorite salad greens, I used iceberg lettuce [for crunch] and spinach [for more nutrients], with the dressing and top as desired. Here’s what I used in mine:
- Black beans [rinsed]
- Black olives
This was such a fresh, easy meal that was packed with flavor and perfect for when you want a salad that is light yet filling. Satisfaction guaranteed.
**To get the most juice out of your limes roll them between a hard surface and your palm, then microwave the whole lime for about 15 seconds.
