The last time I bought blackberries from the supermarket I was disappointed to say the least. I should have known by their extremely long, narrow appearance that something wasn’t quite right. They were squishy and what little flavor they had was overly sweet. [sigh]
Fortunately it’s berry picking season here in the Pacific Northwest. I love being able to walk the beach or go on a bike ride and come across an abundance of my favorite fruit: wild blackberries.
My mouth waters as I sit here imagining biting into a plump, bluish/purple berry bursting with a flavor that is perfectly sweet and sour.
With Jake’s help and a little experimentation, here’s what we came up with:
- 3 oz vodka
- 4 sprigs fresh mint leaf
- 1 lime, juiced
- 1 cup blackberries
- 1 can sparkling coconut water
- in a cocktail shaker, muddle mint and ice
- add blackberries, muddle
- squeeze in lime
- add vodka and shake
- strain equally into two ice-filled glasses
- top with coconut water
Garnish as desired and enjoy!
